Ghanaian-Spiced Tenderstem® broccoli
Method

Make the suya mix: simply combine all the ingredients together.

In a food processor, blend all the marinade ingredients together until smooth.

Coat the Tenderstem® broccoli with the marinade making sure to get into as many crevices as you can. Place the Tenderstem® broccoli into a casserole dish or lined baking tray. Cover and refrigerate, ideally for 2 hours, or at least while waiting for the oven to reach the right temperature.

Preheat the oven to 180°C/160°C/gas mark 4. Remove the marinated Tenderstem® broccoli from the fridge 10 minutes before you want to cook it.

Roast in the oven for 20 minutes, then serve.
Tips
Save any excess spice mix in an airtight container for another day – perhaps to marinate some steak!
Make a quick tempura batter with 100g plain or gluten-free flour and about 100ml water, seasoned with nutmeg, sea salt and black pepper. Dip the marinated Tenderstem® broccoli into the batter and deep fry for 3 minutes at 180° This makes a great party plate!
