Zesty Lemon & Creamy Pasta with Tenderstem® broccoli, Broad Beans, Parmesan, Pine Nuts & Chilli

Cook the spaghetti according to the packet instructions, adding the Tenderstem® broccoli for the last 2 minutes of the cooking time.

While the spaghetti is cooking, cook the broad beans according to the pack instructions. Drain then remove the skins from the broad beans, if desired. Add the broad beans to the pan of spaghetti for the last 30 seconds of the cooking time, just to reheat them.

Meanwhile, heat the cream cheese with the garlic in a medium sized pan and stir until the cream cheese has melted and is smooth.

Once the spaghetti, Tenderstem® broccoli and broad beans are ready, add 4-5 tbsp of the boiling water to the cream cheese to loosen the sauce. Next, add most of the parmesan, with the lemon zest and juice, chilli flakes (or chopped red chilli) and season with salt and pepper. Stir well.

Drain the pasta, Tenderstem® broccoli and broad beans. Add to the cream cheese sauce and stir until everything is well coated.

Serve the pasta in 2 bowls with the remaining parmesan, pine nuts and parsley.
