Honey & Soy Glazed Salmon with Fire Pit Tenderstem® broccoli

Build a fire in your fire pit using the wood splits. I like to build a small jenga tower. Make sure you have plenty of air flow between the wood.

Take the plank and add the sliced lemons and dill before laying the salmon fillet on top. Secure the salmon with some nails then set the plank upright, alongside the fire It needs to be around 20-30cm away from the fire for a nice gentle cook.
Tip: Count the number of nails used for the recipe, to ensure that once the salmon is removed from the plank, there are non-left behind as a potential hazard.

Mix the honey and soy together then start to brush over the salmon after around 20 minutes, glazing every 5 minutes. The salmon is done when it reaches an internal temperature of around 55– 60°C.

While the salmon is cooking, take the Fire Pit Tenderstem® Broccoli and remove all packaging along with the glaze sachet. Add to a pan, drizzle with olive oil then cook on the barbecue or in a preheated oven at 200°C/fan 180°C/gas mark 6 for 7 minutes.

Remove from the barbecue or oven, add the glaze, toss to coat, then place on a grill grate above the embers from the fire and cook for 5 minutes, turning frequently.

Serve the Tenderstem® broccoli alongside the salmon. Finish with a garnish of sesame seeds and thinly sliced red chillies.
