Tenderstem® Purple Toasts with Bean & Leek Mash

Heat the olive oil in a saucepan on a medium heat. Sauté the leeks and garlic for 5 minutes until softened. Add the beans during the last minute to warm through.

Meanwhile, steam the Tenderstem® Purple for 3-4 minutes until softened but still with some bite.

Place the leeks, garlic and beans into a food processor, adding the tahini and dairy-free milk. Pulse until you have a roughly blended bean mash. Season to taste with salt and pepper.

Toast the slices of granary bread until golden brown. Top with the bean spread and Tenderstem® Purple, sprinkled with the chilli flakes if using.
